Update publish.yml to use trusted published

This updates the publish.yml workflow file to use the trusted publisher system to publish to npm registry.
Note that I've already updated the package Settings on npmjs.com to use GitHub Actions as a trusted publisher.

Note about the required npm version:

$ nvm use
Now using node v18.17.0 (npm v11.6.1)

So, the npm vesion is >=11.5.1 and it should be fine.
