perf: configure db options

# Overview 

We have a simple use case for our db, we append data or write over the same key, for this reason we can safely assume the DB read/write IO allowing us to configure the DB for the best performance for ev-node. 

We should create a benchmark that puts 100s of mb and potentially gbs in order for us to best understand what configurations are best for the node.
