chore: Update the Windows 2025 version in windowscsehelper.ps1

There's a vague range of versions for windows 2025 because we didn't know the actual version until now.

**Describe the solution you'd like in detail**
Update windowscsehelper.ps1 to use the Windows 2025 version "26100" instead of the current range in the Get-WindowsVersion and Get-WindowsPauseVersion
